This project was trying to imitate the t.v. show "Chopped" where cooks would get a mystery basket and have to make a dish out of it. But, before we did that we had to learn about the science of cooking. We learned about fermentation, denaturation, and we also learned about how flavors go together in "The laws of cooking", and how to use foods from the same latitude for great dishes. After all this, we started to get ready for the project, we were assigned groups, and given our ingredients. My group was given: Ground beef, Zucchini, Cucumber, Sesame seeds, and Cream cheese. From this we decided to make a Zucchini boat, layered with cream cheese and rice, and stuffed with ground beef that was sauteed with green bell pepper, sesame seeds, and onions, topped with fried Zucchini, and then drizzled with balsamic vinegar. Although before we could cook our dish for the judges we needed to do some things first. Before we would give the judges our food we would have to show them a video of how we made it first. So we started to make the dish, but recording the process as we went along, that took us about two hours to finish. Then we had to research some science that went on in our food, like the Maillard Reaction, Conduction, Physical Change, Fermentation, Breading Convection, Chemical Change, Rice vinegar, Sautee and what it does to the meat, and Why does meat “bleed”. I wrote about Chemical change and Why does meat "bleed". After we wrote our science writing, we made a poster of our dish with the science writings on it. During the day of exhibition, we started to make our dish at 4th period through 5th period, and left the dishes wrapped in tin foil under a heating lamp. Once we were up next to present (at 6:30) we took our food out of the tin foil and started to get it ready for the judges. Unfortunately it turned out that our video didn't upload properly, so we had to show them the video on a phone.
This was our poster, it has our science writings scattered about the photo.
(A little something while we wait for the real video) In our video we show you what we ingredients we used and how to make the dish step by step. From this project I learned how to research effectively and apply that knowledge to my work. Something I most proud of would be the food that we made, it was after all the first dish I've ever made other than eggs. That and the science writings I did. If I could do this over again I would cut the bottom of the boat so it wouldn't slide around, peel the cucumbers or change the ones we got to English cucumbers so they could eat the skin, and cook the Zucchini more, and cut the fried Zucchini in to bigger pieces.
